I’ve made this salad a couple of times and with each time, I’ve altered it a bit to make it my own. It’s so light and refreshing and just the perfect lunch or side dish to transition from summer to fall!
Let me backtrack a little bit…
This is my FIRST recipe for the blog! I am so excited to share my favorite recipes with you all. I love to cook. I’m no pro. Like seriously, I am just a basic ‘b’ trying to be a good mom/wife and also treat myself to some dang good eats. I really hope this section of my blog is useful to you guys. Please tell me what you love, what you don’t love, what you want to see more of… because we’re all just trying to plan ahead without making things too difficult! You can expect to see recipes with minimal ingredients and easy clean up, without sacrificing any of the flavor!
Anyways… I’m going to get to it because the last thing I want to do be is like one of those food blogs that writes a dissertation before they even mention the actual recipe.
Here goes!!!
INGREDIENTS
Salad
4 ripe peaches, cut into cubes
A couple handfuls of multicolored cherry tomatoes, halved
1/3 of a red onion, finely sliced (not diced)
Cilantro leaves, finely chopped
- (you can use basil if you’re one of the people who thinks cilantro tastes like soap)
Feta crumbles
Dressing
1/2 cup olive oil
1/4 cup red wine vinegar
1 tablespoon agave nectar or honey
- (I prefer agave because the flavor isn’t as strong as honey but the sweetness is still there)
Dash of salt
Dash of pepper
DIRECTIONS
- In a large bowl, mix together peaches, tomatoes and red onion. Add the chopped cilantro and feta crumbles.
- In a small bowl, whisk together olive oil, red wine vinegar, agave nectar, salt and pepper. Pour over the fruit (tomato is a fruit people) and onion and mix.
- Serve in a cute serving dish and enjoy!
