Mom’s Halloween Night Chili

COLLAB WITH MY MOM! Hahaha. She did not get paid for this. Rather, she got paid in a visit with Cannon. Best form of currency I can use on the grandparents now lol.

When my brothers and I were kids and would go trick-or-treating with our cousins, my mom would make this chili in a crockpot and just let it sit and simmer all night so at any point, anyone could go grab a warm bowl to enjoy. We would eat before trick-or-treating, my parents while we were out trick-or-treating (if we were old enough to go on our own), and then sometimes we’d even go for seconds after we got back, if we weren’t too full on candy.

My mom used to make this chili with ground beef, but we now make it with ground turkey. It’s a tomato-y base and also has kidney beans. It’s just soooo comforting, especially in a bread bowl! I grew up eating this and plan to make it for Cannon every Halloween night too.

Top it with plain greek yogurt or sour cream, diced onion and cheese to make it extra SASSY! Scroll below for the recipe!

HERE’S WHAT

  • 2 lbs ground beef or turkey (80%/20%)
  • 1 large white onion, diced
  • 1 medium green bell pepper, diced
  • 2 cloves of garlic, minced
  • 2-15oz cans of tomato sauce
  • 1-28oz can of crushed tomatoes
  • 2 cans of dark red kidney beans, drained and rinsed
  • 5 heaping tablespoons of chili powder (we like the zing of this in the chili)
  • 1 tablespoon of cumin
  • 1 teaspoon salt
  • 1 teaspoon pepper

HERE’S HOW

  • In a 12-inch skillet, cook beef, onion and green bell pepper until beef is brown and onions are translucent.
  • In a 4-5 quart slow cooker, mix beef mixture with the remaining ingredients.
  • Cover with lid and cook on low heat for 6-8 hours.

NOTES

  • Double or cut the recipe in half based on the number of mouths you’re feeding. Leftovers can be frozen up to 3 months.
  • Serve in a sourdough bread bowl for some extra fun!
  • Top with cheese, white onions, fresh jalapeno, greek yogurt, avocado… you get it.
  • Substitute beef for turkey, pork or chicken.
  • Switch out the chili powder for chipotle chili powder if you really want to get down and dirty.
